The Industry Chalenge
The Hospitality Center has approx. 40 Room Attendants and 25 Banquet Servers supporting the Hyatt Regency Greenville.
Across the United States, hotels continue to face one of the biggest challenges in hospitality: finding and maintaining reliable operational staff.
Staff shortages, high turnover, fluctuating occupancy, and seasonal demand have made it increasingly difficult for hotels to keep daily operations running smoothly—especially across multiple departments. The challenge is no longer just filling shifts, but keeping operations stable and service consistent.
This has led many hotels to seek partners who not only provide staff, but also understand hotel operations.
About the Client
Hyatt Regency Greenville is a full-service hotel located in the heart of downtown Greenville, South Carolina. The property operates at a high standard, offering guest accommodations, food and beverage services, banquets, events, and day-to-day hotel operations that require dependable staffing and operational support across departments.
Hyatt Regency Greenville needed more than temporary labor. They needed a partner capable of supporting daily hotel operations, adapting to volume changes, and integrating into their workflows without disrupting service.
The Challenge
Managing operations across a full-service hotel presents constant pressure. Changes in occupancy, banquets, restaurant demand, and events require fast, flexible staffing—while maintaining brand standards.
Hyatt Regency Greenville needed a partner who could:
-
Support multiple departments and operations simultaneously
-
Provide reliable, trustworthy personnel
-
Adapt quickly to hotel workflows and SOPs
-
Ensure operations continued smoothly during peak demand
-
Deliver staff who felt like part of the internal team
The goal was not just coverage, but operational continuity, professionalism, and peace of mind , creating a success story.
The Solution
At The Hospitality Center, we understand that staffing is only one part of the equation. Operations matter just as much.
Our role goes beyond supplying staff—we support the day-to-day execution of hotel operations by providing teams who understand pace, standards, and accountability.
From the beginning of our partnership with Hyatt Regency Greenville, we focused on understanding:
-
How each department operates day to day
-
Service expectations and workflows

Peak hours, event schedules, and volume changes
-
Communication and coordination between departments
We provide professionals who are:
-
Carefully screened and hospitality-trained
-

-
Comfortable working within hotel SOPs
-
Able to adapt quickly to changing operational needs

The real challenge wasn’t only filling roles. It was maintaining a standard that supports:
Fast-paced daily service without interruptions
Cleanliness, safety, and back-of-house flow
Peak periods where a small staffing gap can impact the entire operation
A positive experience for students and guests — every day
Multiple food service partners and vendor teams, each with their own culture and standards
Background
At The Hospitality Center, we’ve learned something important: staffing works best when people truly fit where they’re placed.
At UT Knoxville, our approach has always been collaborative and people-first. We took the time to understand how the operation runs, what the expectations are on-site, and how each vendor team likes to work, so our staff could integrate smoothly and support without friction.
Because on campus, staffing isn’t just coverage. It’s part of the experience. And our goal has always been to make that experience better for everyone involved, students, managers, and vendor partners.
The Solution
The Hospitality Center provided structured staffing support tailored specifically to campus food service operations — with teams trained to work with urgency, consistency, and professionalism.
Our teams supported:
Dishwashing and back-of-house consistency
Grill cook coverage and kitchen production support
Cleaning and operational upkeep
Bakery staff support
But beyond tasks, what mattered most was alignment. Our staff showed up ready to represent the standards of each food service brand on campus, respecting their expectations, service style, and value so vendor teams felt comfortable, confident, and supported. A great success story for sure.
